Tomato Pesto Tart

Prep Time:              10 Minutes

Total Time:             30 Minutes

16 Servings (1 Piece each)

Ingredients:

No Stick Cooking Spray

1                      Sheet Frozen Puff Pastry (1/2 of 17 oz. Package – Thawed)

½ Cup           Hope’s Gardens Basil Pesto

1  Cup            (4 oz.) Shredded Mozzarella Cheese

1  Can            (14.5 oz.) Whole Peeled Tomatoes, drained,

                     cut into ½ inch slices

Thinly Sliced Fresh Basil – optional

Preheat oven to 400 degrees. Spray rimmed baking sheet

with cooking spray, set aside. Unfold puff pastry onto lightly

floured surface; roll out to 12 inch square. Crimp edges; place on

prepared baking sheet. Lightly poke with a fork  to allow pastry to breathe. 
Pre-bake pastry for 10 minutes and then spread Hope’s Gardens Basil Pesto
evenly
over puff pastry. Sprinkle with ½ cup cheese, and then add tomato

slices in a single layer. Finish by topping evenly with remaining cheese.

Bake 17 to 20 minutes, or until golden brown.  Garnish with some

fresh basil, if desired.  For “small bites”, cut into 16 pieces. 



Hope’s Gardens Basil Pesto Chicken

Prep Time:                5 Minutes

Total Time:             30 Minutes

4 Servings

Ingredients:

4                   Boneless, skinless Chicken breast halves

                      (approx. 1 1/4 lbs.)

½ Cup           Hope’s Gardens Basil Pesto

2                   Plum Tomatoes, sliced (optional)

¾ Cup           Shredded Mozzarella Cheese (3 ounces)

Preheat oven to 400 degrees. Line baking sheet with heavy duty foil.

Place Chicken and Hope’s Gardens Basil Pesto in medium bowl, toss to coat. Place Chicken on prepared baking sheet.

Bake for 20 to 25 minutes or until chicken is no longer pink in the center. Remove from oven; top with tomatoes and cheese. Bake for an additional 3 to 5 minutes or until cheese is melted.



Hope’s Gardens Basil Pesto

White Bean Dip with Pita Chips

Perfect for entertaining, this unique bean dip features a distinctive pesto flavor and takes just 10 minutes to prepare.

Prep Time:    10 Minutes

Serves 3

Ingredients:

3     15 ounce cans of white beans

1       4 oz jar of Hope’s Gardens Basil Pesto

Juice of 1 fresh lemon

Pita Chips

Place beans in a food processor, cover. Process until smooth. 

Stir in Hope’s Gardens Basil Pesto. Add lemon juice to taste.

Season with ground black pepper. Serve with pita chips.



Pesto Pizza with

Goat Cheese and Figs

Prep Time:  10 minutes

Serves 4

Ingredients:

I               pizza shell or dough

1               4 oz jar of Hope’s Gardens Basil Pesto

12            figs cut in half

8             medallions of goat cheese

Roll out the pizza dough or take pizza shell and spread layer of Hope’s Gardens Basil Pesto 
to cover.  Place the goat cheese medallions around the shell and scatter the fig halves around. 
Season with salt and pepper.
Place in pre-heated 450 degree oven or on pre-heated grill. 
Bake for 10-12 minutes.  Slice and serve with Arugula Salad.



Broiled Fish with Hope’s Gardens Pesto

(so very simple, but makes for an elegant dinner)

Prep Time:              5 Minutes

Total Time:             15 Minutes

4 Servings        (1 Piece each)

Ingredients:

Hope’s Gardens Basil Pesto

4       Fish Filets (Salmon, Trout, Halibut, etc.)

Preheat oven and set to Broil. Spray rimmed baking sheet

with cooking spray. Place fish filets skin down on baking sheet.

Spread Hope’s Gardens Basil Pesto evenly over the filets.

Broil approximately 7 minutes based on thickness of filets. 

Garnish with some fresh basil, if desired.  Serve over rice or

couscous with a side of roasted asparagus.



Hope’s Gardens Basil Pesto Panini

(This panini can be whatever you want.)

Prep Time:     5 Minutes

Ingredients:

Bread of choice

Sliced Meat of choice

Sliced Cheese of choice

Hope’s Gardens Basil Pesto    

Sun dried tomatoes, Roasted Peppers

Preheat oven to 400 degrees or warm up panini grill. Line baking sheet with heavy duty foil if using the oven.

Spread Hope’s Gardens Basil Pesto onto both sides of your bread selection.  Arrange the ingredients of your choosing.  Close sandwich and either place on panini grill or oven for 5 to 7 minutes.  Cut into fourths and enjoy your totally unique sandwich.



 

Via Elisa Fresh Pasta® Ravioli topped with
Hope’s Gardens Basil Pesto and Roasted Tomatoes

(Perfect for entertaining, this dish is modern day lasagna.)

Prep Time:    15 Minutes

Serves 4

Ingredients:

1 tray of Via Elisa Fresh Pasta® Ravioli of choice

1 jar of Hope’s Gardens Basil Pesto

½ cup of chicken broth

1 can of roasted tomatoes

Shredded Cheese of choice

Cook Via Elisa Fresh Pasta® Ravioli according to directions.  When cooked, place in deep dish over ½ cup of chicken broth.  Scatter roasted tomatoes over ravioli to cover.  Sprinkle shredded cheese over top.  Drop spoonfuls of Hope’s Gardens Basil Pesto over the entire dish.  Cook in a pre-heated 325 degree oven for 15 minutes.  Serve with a Caesar Salad and sliced baguette.



Summer Squash Soup with Hope’s Gardens Basil Pesto

Prep Time:  30 minutes

Serves 4

Ingredients:

4 cups of roasted yellow summer squash and garlic

1 jar of Hope’s Gardens Basil Pesto

4 cups of chicken broth

1 leek cut into thin slivers

Salt and pepper to taste

Arrange the yellow summer squash and garlic on a baking sheet lined with silver foil.  Place in a pre-heated 375 degree oven for 20 minutes.  While the squash is cooking, put 1 tablespoon of olive oil in a large pot and saute the slivered leeks.  Add the roasted squash and garlic to the pot and add the chicken broth, one cup at a time to combine.  Use a hand held blender until smooth.  Salt and pepper to taste.  Ladle into soup bowls and top with a dollop of Hope’s Gardens Basil Pesto.  Serve with a chopped salad and crostini.





Roast Turkey Sandwich with Hope’s Gardens Basil Pesto on Multi-Grain Bread

Prep Time:    5 Minutes

Ingredients:

Hope’s Gardens Basil Pesto

Multi-Grain Bread

Dijon Mustard

Sliced Roast Turkey

Roasted Peppers, sliced

Provolone Cheese

Spread Hope’s Gardens Basil Pesto on one side of multi-grain bread and Dijon mustard over the other.  Layer slices of roast turkey, roasted peppers and provolone cheese.  Close sandwich and slice.  Serve with a Caesar Salad.



Flatbread with Goat Cheese and

Hope’s Gardens Basil Pesto hors d'oeuvres

Prep Time:  5 Minutes

Total Time: 5 Minutes

Servings        (1 Piece each)

Ingredients:

Hope’s Gardens Basil Pesto

1 Log of your favorite Goat Cheese or Chevre

1 Package of Flatbread

Spread the Goat Cheese on the flatbread and place a dollop of

Hope’s Gardens Basil Pesto on the top.  Place on tray

and serve.



Deviled Eggs topped with Hope’s Gardens Basil Pesto

Prep Time:   15 Minutes

Total Time:  20 Minutes

Ingredients:

Eggs

Mayonnaise

Dijon Mustard

Salt and Pepper

Hope’s Gardens Basil Pesto         

Prepare hard boiled eggs.  Place in ice bath to cool.  Slice in half.

Blend egg yolks with small amount of mayonnaise and Dijon Mustard. 

Salt and pepper to taste.  Place the egg yolk mixture in the center

of the egg white and top with Hope’s Gardens Basil Pesto.


Tomato Sandwich with Hope’s Gardens Basil Pesto

Prep Time: 5 Minutes

Serves 1

Ingredients:

Favorite Bread

Hope’s Gardens Basil Pesto

Mayonnaise

Sliced tomatoes

Lightly toast your favorite bread.  Spread Hope’s Gardens Basil Pesto on one side and mayonnaise on the other. 

Arrange sliced tomatoes.  Sprinkle salt and pepper and delight in your fresh sandwich.


Eggplant Parmesan with Fresh Tomatoes and Hope’s Gardens Basil Pesto

Prep Time:  15 minutes

Total Time:   1 Hour

Serves 4

Ingredients:

1 jar of Hope’s Gardens Basil Pesto

Eggplant , sliced into  ½” slices

Fresh Tomato Slices

Mozzarella Cheese, Parmesan Cheese

Salt and pepper to taste

Arrange the prepared Eggplant slices on a baking sheet with a drizzle of olive oil, salt and pepper.  Place in a 400 degree oven for 10 minutes,

flip and continue for another 10 minutes.  Slice the fresh tomatoes and mozzarella.  When the eggplant is done, place in a baking dish. 

Layer eggplant, tomatoes, mozzarella cheese several times.  Salt and pepper to taste.  Sprinkle Parmesan.  Drop spoonfuls of

Hope’s Gardens Basil Pesto on top.  Cook for 20 minutes in a 350 degree oven.  Enjoy!


Breakfast Pesto Over Easy

Prep Time:  10 minutes

Ingredients:

2 Eggs per person

Hope’s Gardens Pesto

Feta Cheese

Roasted Tomatoes

Sauté roasted tomatoes, feta cheese and Hope’s Gardens Pesto in a sauce pan for 3 to 5 minutes. 

Move mixture to the side of pan to make room for the eggs (2 per person).  Prepare fried eggs sunny side up. 

When done, plate.  To make it extra delicious, place on top of baguette slices.  Breakfast in minutes!!


Guacamole Made Easy

Prep Time:      5 Minutes

Total Time:    5 Minutes

4 Servings

Ingredients:

2 oz.           Hope’s Gardens Jalapeno Pesto

2                Avocados

1                 Plum Tomato (chopped)

                  Chopped Onions (Optional)

Mash the Avocados with the Hope’s Gardens Jalapeno Pesto. 

Blend in the chopped tomatoes and onions.  Serve with Chips. 

 

Hope’s Gardens Jalapeno Pesto Chicken Wraps

Prep Time:      5 Minutes

Total Time:    10 Minutes

4 Servings

Ingredients:

                    4   Tortilla Wraps

                    Shredded Chicken & Lettuce

                    Hope’s Gardens Jalapeno Pesto                 

                    Shredded Mexican Blend Cheese

                    Avocado Slices, Chopped Tomatoes (optional)

Preheat oven to 375 degrees. Line baking sheet with heavy duty foil.

Spread Hope’s Gardens Jalapeno Pesto on the inside of each Tortilla Wrap.  Arrange shredded chicken,

lettuce, chopped tomatoes, avocado and cheese to your liking in the center of the wrap. 

Roll and secure with a tooth pick, place on the baking sheet in the oven for 5 to 7 minutes. 

You can also substitute the chicken with your meat of choice.


Hope’s Gardens Jalapeno Pesto Fish Tacos
Prep Time:      10 Minutes

Serves 4

Ingredients:

                          4 Corn or flour tortillas, warmed

                          Hope’s Gardens Jalapeno Pesto

                          Flaky White Fish of choice

                          Sliced Avocados and Mangos

Prepare your White Fish of choice, transfer to a warmed platter

and break into large pieces.  Slice the Avocados and Mangos.

Spread Hope’s Gardens Jalapeno Pesto in the center of

the warmed tortilla, arrange the fish, avocados and mangos. 

Serve with coleslaw.


Jalapeno Pesto Pizza with Roasted Peppers

Prep Time:  10 minutes

Serves 4

Ingredients:

                  Pizza shell or Pizza dough

                    Hope’s Gardens Jalapeno Pesto

                 Peppers, sliced and roasted

                    Shredded Mexican blend cheese

Roll out the pizza dough or take pizza shell and spread layer of

Hope’s Gardens Jalapeno Pesto to cover.  Place the shredded Mexican Blend cheese over the shell

and scatter the roasted Peppers around.  Season with salt and pepper.

Place in pre-heated 400 degrees oven or on pre-heated grill.  Bake for 10-12 minutes. 

Slice and serve with Spinach Salad.

Caramelized Onions on Baguette Slices

Prep Time: 5 minutes

Total Time: 15 minutes

Ingredients:

3 medium onions, sliced

Olive Oil

Butter

Balsamic Vinegar

Light Brown Sugar

Hope’s Gardens Pesto

Baguette, sliced ½” thick

Slice onions.  Heat olive oil and 1 tablespoon of butter in sauté pan, add onions.  Let cook for 2 minutes.  Add 2 tablespoons of balsamic vinegar and 1 tablespoon of light brown sugar.  Continue to cook, mixing occasionally until all liquid has been absorbed and onions turn dark color.  Lightly toast baguette slices.  Cool and spread a layer of Hope’s Gardens Pesto on slices and top with caramelized onions.  Arrange on plate and serve as hors d’oeuvres.

 

 

 

New York Strip Steak with Pesto Glaze

Prep Time: 15 minutes

Total Time: 30 minutes

Ingredients:

New York Strip Steak

Hope’s Gardens Pesto

Olive Oil, Salt and Pepper

Prepare New York Strip Steak.  Tenderize with 2 prong fork.  Sprinkle salt and pepper. Cook on grill or pan sear steak to desired doneness.   Glaze meat with Hope’s Gardens Pesto.  Let stand for 5 minutes before slicing.  Serve with roasted potatoes

 

 

Holiday Pesto Lasagna

Prep Time: 15 minutes

Total Time: 90 minutes

Ingredients:

Oven Ready Lasagna

Ricotta Cheese, 15 oz. container

Shredded Cheese (select desired cheese)

1 egg

Tomato Sauce

Hope’s Gardens Pesto

Olive Oil, Salt and Pepper

Drizzle Olive Oil in deep baking dish.  In separate bowl blend ricotta cheese, 1 egg, 2 cups shredded cheese, 2 oz. of Hope’s Gardens Pesto, salt and pepper. Spread one cup of tomato sauce in baking dish, top with lasagna sheets.  Spread 1/3 of blended cheese and pesto mix on top, repeat layering (tomato sauce, lasagna sheets, blended cheese mix) until you have three layers.  Top with 1 cup shredded cheese and spoonfuls of Hope’s Gardens Pesto.  Cover with silver foil and place in 375 degree oven for 45 to 60 minutes.  Remove foil and cook for another 5 minutes.  Let cool for 10 minutes before cutting.  Serve with salad.

 

 

 

 

Butternut Squash Soup

Prep Time: 15 minutes

Total Time: 45 minutes

Ingredients:

Butternut Squash, cubed

Chopped Onions

Minced Garlic

Chicken Stock, 4 cups

Hope’s Gardens Pesto

Olive Oil, Salt and Pepper

Optional cream, sour cream or Greek yogurt

Roast cubed butternut squash in 375 degree oven for 20 to 25 minutes.  Meanwhile, sauté chopped onions with olive oil in deep pot until translucent.  Add minced garlic.  Mix in roasted butternut squash and add one cup chicken stock at a time.  Use immersion blender until soup is well combined and creamy.  Season with salt and pepper.  Add optional cream if thicker, creamier consistency is desired.  Top with Hope’s Gardens Pesto to add beautiful color swirl and great taste sensation.

 

 

 

Egg Scramble with Diced Tomatoes, Olives,

Hope’s Gardens Pesto in Tortilla Wrap

Prep Time:  10 minutes

Total Time:  15 minutes

Ingredients:

2 Eggs per person

Hope’s Gardens Pesto

Diced Tomatoes

Black Olives

Tortilla Wraps

Shredded Cheese optional

Warm tortilla wraps.  Sauté diced tomatoes, black olive slices and Hope’s Gardens Pesto in a sauce pan for 3 to 5 minutes. 

Move mixture to the side of pan to make room for the eggs (2 per person).  Prepare scrambled eggs. Add cheese if desired. When done, place egg scramble in warmed tortilla, wrap and enjoy. 

 

 

 

Oven Roasted Turkey Breast with

Hope’s Gardens Pesto

Prep Time: 5 minutes

Total Time: 65 minutes

Ingredients:

Turkey Breast, approximately 3 lbs for 4 people

Hope’s Gardens Pesto

Olive Oil, Salt and Pepper

Optional Chopped Pecans

Heat oven to 375 degrees.  Drizzle roasting pan with olive oil.  Place Turkey Breast in roasting pan. Spread Hope’s Gardens Pesto on Turkey Breast.  Cook in oven for approximately 45 to 60 minutes until Turkey reaches an internal temperature of 180 degrees.  Let rest for 10 minutes.  Slice thin diagonally.  Sprinkle pan roasted chopped pecans on top of turkey slices.  Serve with Brussels sprouts.

 

 

 

Pesto Caprese Salad

Prep Time: 5 minutes

Total Time: 5 minutes

Ingredients:

Sliced Tomatoes

Sliced Mozzarella

Hope’s Gardens Pesto

Gourmet Lettuce Blend

Stack sliced mozzarella on sliced tomatoes topped with a spoonful of Hope’s Gardens Pesto.  Arrange on mound of lightly dressed gourmet lettuce or to the side.

 

 

 

Shrimp Pesto Linguini

Prep Time: 5 minutes

Total Time: 20 minutes

Ingredients:

Shrimp, 2 lbs. de-veined and shelled

Hope’s Gardens Pesto

Linguini, 1 lb. box

Olive Oil

Cook linguini according to package directions (save 1 cup of pasta water to use later if needed).  Meanwhile, heat olive oil in a sauté pan.  Add shrimp and cook 2 to 3 minutes until pink.   Add 1 jar of Hope’s Gardens Pesto and the cooked and drained linguini.  Mix well and plate.  Serve with hot and crusty bread.

 

 

 

Pesto Burgers

Prep Time: 5 minutes

Total Time: 20 minutes

Ingredients:

Chopped Meat (Beef, Turkey, Lamb)

Hope’s Gardens Pesto

Burger Buns or Ciabatta Rolls

Sliced Avocado

Prepare meat patties.  Grill or pan sear the patties to desired doneness.  Place meat patties in a warm bun.  Spread with Hope’s Gardens Pesto and sliced avocado.

 

 

 

Pesto, Goat Cheese and

Sun-dried Tomato Torte

Prep Time:  5 minutes

Total Time:  5 minutes

Ingredients:

Hope’s Gardens Pesto

Goat Cheese, brought to room temperature

Sun-dried Tomatoes

Olive Oil

Using a round cookie or biscuit cutter, prepare several rounds of softened goat cheese.  Layer Goat Cheese, Hope’s Gardens Pesto, goat cheese, sun-dried tomatoes, goat cheese, pesto and top with goat cheese layer.  Sprinkle some olive oil over the top.  Serve with endive slices or water crackers.

 

 

 

Pesto Pork Tenderloin

Prep Time:  5 minutes

Total Time:  35 minutes

Ingredients:

Pork Tenderloin, about 2 pounds

Hope’s Gardens Pesto

Salt and Pepper to taste

Heat oven to 475 degrees.  Cut ¾ of the way horizontally into the pork tenderloin.  Spread Hope’s Gardens Pesto inside.  Close and tie with cooking string.  Sprinkle with olive oil, salt and pepper.  Cook for 10 minutes on each side.  Let sit for 10 minutes before slicing.  Serve with a side of roasted apple and pear cubes and a Napa Cabbage Salad.
