Eggplant Parmesan with Fresh Tomatoes

Total Time: 1 Hour

Serves 4

Ingredients:
  • 1 jar of Hope’s Gardens Basil Pesto
  • Eggplant , sliced into  ½” slices
  • Fresh Tomato Slices
  • Mozzarella Cheese, Parmesan Cheese
  • Salt and pepper to taste

Arrange the prepared Eggplant slices on a baking sheet with a drizzle of olive oil, salt and pepper.  Place in a 400 degree oven for 10 minutes, flip and continue for another 10 minutes.  Slice the fresh tomatoes and mozzarella.  When the eggplant is done, place in a baking dish. Layer eggplant, tomatoes, mozzarella cheese several times.  Salt and pepper to taste.  Sprinkle Parmesan.  Drop spoonfuls of Hope’s Gardens Basil Pesto on top.  Cook for 20 minutes in a 350 degree oven.  Enjoy!
